Ingredients

  • 200 g aubergine
  • 200 g courgette
  • 60 g olijfolie
  • 40 g pijnboompitten
  • 130 ml kookroom
  • 80 g zwarte olijven (glas/blik)
  • 80 ml rode wijn
  • 420 g kabeljauw
  • 70 g tomaat
  • 2 laurierbladeren
  • 2 tl paprikapoeder
  • 4 el Italiaanse kruiden
  • 2 tl nootmuskaat
  • 2 tl cayennepeper
  • 8 g verse peterselie, plat
  • 1 snufje peper
  • 1 snufje zout

Directions

  1. Verwarm de heteluchtoven voor op 180°C.
  2. Snijd de aubergine, courgette en tomaat in blokjes van ongeveer 2 cm.
  3. Bak de groenten 5 minuten in een hapjespan met 3 el olijfolie op middelhoog vuur.
  4. Hak de olijven grof.
  5. Meng de groenten met de kookroom, olijven, rode wijn, laurier en kruiden in een ovenschaal.
  6. Zet 5 minuten in de oven.
  7. Plaats de kabeljauw bovenop het groentemengsel, besprenkel met de resterende olijfolie en bestrooi met peper en zout.
  8. Bak nogmaals 10 minuten in de oven.
  9. Garneer met fijngehakte peterselie en pijnboompitten.
