Ingrediënten
800 g baby potatoes
8 shallots
2 garlic cloves
2 tbsp coconut oil
900 g kale, frozen
140 ml water
2 vegetable stock cubes
250 g cherry tomatoes
4 tbsp tahini
4 tbsp sesame seeds
Bereidingswijze
Peel the potatoes, cut into quarters and cook for 5 minutes until al dente.
Clean the shallots and cut into 6 pieces.
Clean the garlic and chop finely.
Fry the shallots for about 3 minutes with coconut oil in a pan over medium heat.
Add the garlic and fry briefly.
Stir in the kale, water and vegetable stock cube.
Braise the kale for 10 minutes with the lid on.
After 5 minutes, add the potatoes and braise a little longer.
Halve the cherry tomatoes and add together with the tahini.
Once the potatoes, cherry tomatoes and kale are cooked, remove the lid.
Garnish with sesame seeds.
